I own a RB25DET and it's a lovely IL6 which starts off smooth and quiet before ending with a lovely snarl (in stock spec with a stock exhaust), and I adore the 4A-GE just for the way it sounds, though for me it has to be the 1JZ with it's the huge tunability and mostly stock internals that gets my respect all while being one of the most reliable engines out there which says proper engineering. The cars it is renowned for also complete it, some of the best JDM metal in my eyes
Gratuitous shot of my RB the day I collected it

My Classic Lancer Turbo has the early version of the 4G63, even in 1981 they can be tuned to push out decent power. not much in the way of low down torque though.
Current Impreza has the EJ20 in it. Again, it sounds lovely and is very robust (touch wood).
Hard to choose. For everyday driving it has to be the EJ20, but for nostalgia purposes on my part, the 4g.
