Already got insurance for around £1200 and £1900 each, just trying to work it out around other costs

Well you might reckon in,one main and one intermediate service with a main dealer and assuming nothing major needs doing £1600 + Mot. Petrol (lots of it) tyres depends how you drive. If you want AM warranty up to £4,000 worth will cost you about £1,500. Treats wooden gear lever knob (£260!),white dials (£600), sports exhaust essential (up to £2,500).

All depends how much you are going to drive it.

If you are going to do about 7,500 miles a year (and hence have one service a year) then I reckon you need to have an annual budget of about £2-3K. Some years it'll be more, some less and the actual amount will depend upon the age & condition of the car (and how much the previous owner has spent on it ).
