I think in a straightline I would put my money on the 600 bhp V600.

I'd agree. But does it really matter? Both are superb cars.

This sounds like something the boys on Top Gear might be able to answer on some deserted runway.

IMO I think the Vanquish S would be quicker.
Not much in it, but I think the weight would make the difference.
(not quite sure how much they differ though)

You may find the V600 to be quicker, it has 600 bhp and 600lbft torque. Vanquish S has 520 bhp and 425 lbft. The V600 will hit 60 in around 4 secs and 100 in the low 9's versus 4.8 and 9.8 for the S. It's the torque that makes the difference, not the bhp. The Aston development engineers had the proto V600 over 196 mph when the engine let go! AML claim 200 mph for the Vanquish S, it's cleaner aerodynamic may just give it the edge. AML claim it's their fastest "production" car, the V600 was non production but a Works Service upgrade. If you really want to go quick try a Vantage Zagato with 7 litre engine!
