Pretty straight forward in my mk2.
Bonnet off - best with a helper.
Front of the car up in the air - as high as you can get it. I have a high lift trolley jack and axle stands.
Under panel off. Mine was screwed on but might be riveted. The screws came out on the way to service last week as the fibreglass isn't that thick there. The garage riveted it back with some big head rivets.
Drain system, disconnect water pipes. Leave A/C stuff.
Undo brackets and remove rad. Can't remember if it came out the top or bottom.
Refit is reverse of fitting.
No more difficult than changing the brake pads.

I have a Mk 1; I don't know if theres much - if any- difference? I did mine from underneath, also replaced all the hoses while I was at it. Rad was from Aaron radiators; https://www.aaronradiator.co.uk, hoses via Dom
