After replacing the sensor twice and still getting erratic temperature reading that would cause the aircon to blow too hot then to cold I have hopefully found the fault. The wires going to the sensor had become trapped under the power steering cooler pipes and the temp of the oil must have been effecting the resistance of the wire. The wires haven't been damaged but we're squashed flat. I've freed everything and re covered the insulation and everything is back to normal.

Thanks, I will check that on my car, a bit of preventative maintenance. That's the sort of problem you can spend ages trying to sort out and miss it completely.
