Does anyone know a place near London that will make replacement bonnet and boot in red carbon fibre and how much it is likely to cost and the associated weight reduction? Also, would it make the boot easier to break into? I feel like those two parts are pretty heavy and slowing the car down a lot.

There was a place in Hayling Island that specialized in CF,
Weight saving yes makes a difference but its not going to transform the car having those parts in CF. If you drove back to back stock car and one with the bonnet and boot replaced id bet (alot) there would be no difference in feel or a timed test
you would gain more taking a dump and loosing some wieght, be cheaper and more healthy!

IIRC changing the bonnet nets something like 7kg...I guess the boot is less (and weight off the back is less useful). You'll probably have to relocate the washer jets too (I've already done this...but not got around to actually changing the bonnet). Relocating the battery (20kg off the front) or changing the seats (~-40kg) are more signficant, but you might argue still marginal on a 1700kg car!

Relocating the battery to the rear is a better return on your money, 20KG or so right off the nose moved over the rear wheels where it's needed
You'd probably get a more noticeable sense of improved turn in with a slightly stiffer rear anti roll bar, depends what your goals are I suppose.
As Mud said the wheels are heavy things too, lighter weight options would probably provide the largest benefit to all aspects of the drive, but your options are a bit limited on styles unless you want to spend a lot of money :/
Sorry I seem to have gone off on one assuming it's a handling thing. Weight reduction wise there aren't any big gains to be made other than the seats really, unless you want to sacrifice refinement (or spend vast sums)

Starting from 0 really isn't the Monaro's speciality. I've done all sorts to mine and my best 0-60 at Santa Pod is still around 4.9 or so, you really can't get these things moving quickly from a standstill It does sound like a 3.9 diff may well actually give you that extra shove in the back that you're chasing. Personally I haven't experienced the difference, but I have heard many good things.
Put it this way, it'll make a night and day difference for the money compared to a 6kg saving on bonnet weight for £1,500 worth of carbon fibre.

MyM8V8 had a spare TrueTrac that he'd picked up from the US, which he sold to me for £475 (exchange rate was much better back then!)I had monkfish fit it along with some other bits, the alignment etc. side of things requires measuring and such, and I didn't trust myself to do that properly at the time!
If you're after making the car quicker I don't think the truetrac would bring much to the party compared to the stock diff. Obviously if you're thinking of changing the rear gears then you'd save labour costs doing the truetrac at the same time.
I've personally not encountered any situations with one of my rear wheels being up in the air for the Wavetrac to be a major benefit to me, I'm clearly not trying hard enough
