VXR8 tuning options..

Ok, so I am currently an E39 M5 owner. I am tempted to look at VXR8's (I prefer 4 doors). I see there are two options, a 6.0 and 6.2. Are there any real differences other than 200cc's?
What is involved in taking one of these upto circa 700bhp? I am currently looking at taking my M5 to 650bhp via a supercharger, but the VXR8 appeals on many levels, with one of them being a newer more modern car. While my M5 doesnt feel old, it would just be nice to have something younger.
