nominal running temp is around 86 to 92 c this is the temp the stat opens however the water jackets are desinged to conduct the heat away from the bores therefore i would assume anything upto 100 degrees is ok , the head should be a litte cooler than this unless the exhaust manifold is designed to conduct heat into the cooling system via the cylinder head.
if the cooling system is good then whatever temp the block is should be ok too unless its on fire
