Basic stuff I know but I've got to ask anyway...
1 - If I've got rust damage on one bore in a V6 is it acceptable/wise to just have that 1 bore rebored and honed or do I need to do all 6.
2 - once rebored do I use the same piston with different rings or do I need an oversize piston?
3 - Lastly, if answer to point 1 is 'yes' I'm guessing the balance will be slightly thrown out and so needs rebalancing?

Anyone know a good engine builder in the Bristol area?

Youll need to have them all done unless youve got a wet linered engine.
Its also possible to have the old liner on a non linered engine removed and a new one installed and then bored.

Itd be pointless to try and just bore the one cylinder as youd need a new piston which would alter the balance and itd not be possible to re instate the balance iirc.
If itll clean up with just a light hone you may get away with it.

What makes you think this ? Do you have the engine apart and pitting in the bore?

I've whipped off the heads and one of the bores has an awful lot of rust inside it.... the piston is not siezed but it looks rather more than surface 'dusty' sort of rust. I have lightly cleaned some of it and can clearly see that darkening of the metal that is a sure sign of corrosion... how bad the pitting is I don't know yet but I am a pessimist! Am I right to think that any pitting however slight is reeeeeeally bad?

If its pitted then its not great news but it all depends on how bad and if you are building yourself a race engine! As deltafox said you may get away with a hone.

No race engine just a bog standard ford V6 cologne... I'll strip it right down and clean it up over the weekend to check one way or the other.

What do you want from this engine?
Longevity and performance will need a bore or at the very least a hone.
If you just need a runner I would clean the bores with scotch brite and fit new rings.
You would be supprised just how bad an engine has to be before it won't run.
