Personally, I wouldn't at that mileage unless it's a valuable car that needs meticulous history. Assuming it's modern synth or semi-synth, that is. Mineral oils degrade faster but there may be other opinions on that.
I go 2 years and about 3k miles between oil changes on any of my cars if I don't use them much. I've just bought a motorcycle hat hasn't had the oil changed for 11 years and 3k miles. Starts up fine. Mind you, it's been stored indoors all that time.

IMO, pouring oil that's done 1000 miles, down the drain so to speak, is quite frankly, at best - daft. Especially on a shed as you call it.
You'd probably be perfectly ok leaving it till every 3rd year or so. I guess it also depends on exactly how those 1000 miles are made up. Is it a diesel? Does it do lots of short stop/start journeys?
