What ever oil you plan to use in the engine when assembled will work fine (lots of it)... just make sure it doesn't sit too long before it gets fired up and the cam broken in, as engine oil will not stay around as long as a grease type assembly lube.
The small block Chevy that I just built at school sat for about 1 week using an assembly lube with about the same viscosity as 90 weight, before it got started, then immediately hammered on a dyno, with no problems.
