Pinto tuning tips - Dellorto 45's

I've got a bog standard 2.0 Pinto engine / 4spd box. They've covered 39,000 miles.
I've bought a set of matching Dellorto 45's that are currently on an undisclosed downdraft manifold. The carbs have been sitting for a while and so I am going to get them re-built with the correct service kit.
I need to know the best way to go forward and get more power from my engine, and if the twin 45's are the best way forward.
I will obviously source the correct inlet Manifold for the Carbs - will the DCOE manifold fit, and are the 40 and 45 manifolds different?
I am planning a 4 into 1 exhaust manifold / possibly a Cam change if benefitial.
The car will be for road use. I need advice on the correct jets/chokes (36mm at present I beleive), plus a good cam to complement the carbs
(fast road use - so MOT emmissions are a consideration!).
Will I benefit from updating the ignition system?? (if so, which!) Is anybody be able to recommend a decent 4 branch exhaust?
What would be a reasonable power output/gain to expect from the above?
I have also heard that by skimming the head and fitting standard 2.8i pistons increases compression ratio and capacity to 2090cc - would this be worth doing, and if so, what implications would arise?
I need to add that I can't spending thousands in one go, so I need to make sure things are done in the right order.

I don't know if it will help you, but I have a copy of a PDF book regarding "Powertuning SOHC Pinto Engines"
I haven't read it thoroughly yet, but it shows the weak spots on the standard Pinto engines and how/where things can be improved regarding porting etc

I've got a mate who bought a Fisher Fury and threw the rebuilt 2L pinto out of it (complete with special gearbox), I don't know what the spec was but before it was rebuilt, it was used in a Mk1 hillclimb Escort. It has a lumpy cam and some tricks, currently running EFI. It's sat under his workbench as the Fisher has now got a Fireblade engine. He's up for selling it, not sure about the price.
