We've chosen a hotel in Fowey but we'll be travelling down from Bristol / Bath area so I desperately need advice on:

a/ decent driving roads both for the way down and round Fowey
b/ attractions to visit from Fowey - the ladies will want gardens / nat trust. The guys something mechanical - car museaums, steam tains etc
c/ lunchtime pubs both coming down and visiting from Fowey

Based on trips there...
Avoid A38 Dartmoor - Moretonhampstead / Two Bridges /Tavistock Liskeard.
Maybe Tavistock then south A386 Saltash itself - nice views of road & rail bridges. On to Devonport & take Torpoint car ferry then A374 & B3359 to join A390 Lostwithiel Fowey.

Google NT for places to visit - best with refreshment facilities even if you don't visit house/gardens.

Bodmin & Wenford heritage railway.
Lovely picturesque BR Branch line Liskeard to Looe.

Truro best for shopping & the cathedral

Fowey for river trips & the Daphne DeMaurier literary connection.

Mevagissey very very busy in high season though.

Providing you're not down there in August you will enjoy.

What kind of club is it? A visit to Williams Crawford https://www.williamscrawford.co.uk/ in Saltash on the Saturday for some “bearding” over their Porsche stock? It’s not all always Porsche! A390 & A388 via Callington to get there from Fowey.
Up that way near Tavistock there’s The Horn of Plenty for afternoon tea www.thehornofplenty.co.uk The Two Bridges hotel at Princetown https://www.twobridges.co.uk is the place out on the Moor most head for.
For a side-trip I’d be thinking A38 - A374 across to Antony House (NT) & Mount Edgcumbe House on the Rame Peninsula. Pub lunch in Cawsand\Kingsand.
Really recommend the Royal Fowey Yacht Club for a drink and lunch if you haven’t already found that. The best waterside spot in the town.

Really good selection on The HoP places to visit in Devon page here - they’re mostly in Cornwall!
