If you go to the Ferrari configurator, by model, you will see the standard colours split by solid and 2 layer metallic. They then have so called Historic colours which cost extra.
After that the sky is the limit. You can purchase any colour from any other manufacturer range, you can have triple layer paint, you can have a new paint created for you (and choose its name); I think it's even possible to spec the current season's shade used for the Scuderia F1 (at a very handsome premium).
All that is before you add cost for any stripes
