Carbon fibre driving zone and LED's are a must.
Racing seats are nice and more desirable. They are very comfortable too.
Lots of carbon is nice. The side skirts need to be in carbon as they look a bit cheap with the plastic otherwise. Front and rear splitters are nice too.
Sensors with reversing cam also a must in my opinion.

For me it was the following:
Carbon Fibre Drivers Zone
Carbon Fibre Race Seats with stitched headrests
Parking Sensors
Suspension Lift
Uprated wheels, I went with the forged wheels with matt black finish.
Mats
No essential but I wanted them:
Special option stitching which is a darker red against the creme leather. It was something my wife wanted (she is a designer) God knows how much it cost as I did not look but it does look very nice.
Carbon Fibre rear light cluster.
I went in with a budget of £210k for the car with extras and came out having spent £219k. I spec'd the car in Italy, the Italians are very good at getting you to spend extra!!! (This was before the 7% price increase).
