The temp gauge is notorious for overreading - typically by about 10 degrees. As long as the fans kick in at a consistent point and bring the temp back down 10 degrees or so, you should be fine. Next time your car is serviced, ask the mechanic to check the ECU temperature versus indicated.

Have the same problem with my 4.2 with aircon, hovers around 90-95 while moving and 105 in traffic,
Thought i check the fans and only the drivers side fan was kicking in, it just manages to bring the temp back down to 100 though..Have checked all the usual things but the second fan only seems to kick in at random intervals

Had this on my 4.2 Cerbie many years ago. The problem is a corroded connector so that the second fan is intermittent. The bad news is the front GRP cover needs to come off to get access to the connectors underneath.

This has been repeated many times but is a very simple test to see if the fans work. At the end of your journey, leave the engine running and open the bonnet to see which (if any) of the fans are running and when they cut in/out.
There are other threads that deal with this issue, try searching for something like 'cooling'.
