They just unclip around the edge of the frame. You might need to jam a screwdriver in there to do it.
Be aware though that there are two different mirrors used on the Rover 75 - the early ones that had chrome as standard, and the later ones. The covers from the early ones won't fit on the later ones. They're a different shape so it should be fairly obvious, and there are aftermarket chrome ones.
