oil and water

Since my engine rebuild I am having problems with oil and water temps.
After a couple of hours driving, the oil temp sits at about 95 deg, and the water similar and up to 105!

They have done the usual, pressure tests, leak tests, bleed etc but no avail.

2 questions?

1. what should be running temps?
2. what to do next?

My water temp normally runs at 85/95 depending on traffic oil about 5/10 degrees lower
I guess you need to call dream machines seems a bit high

Are your fans working correctly ?

My temperature sensor for the ECU broke once - you can't tell from the readouts as a different sensor is used for them - but the fans are controlled by the ECU.

Drivers side should come on at 92, and the think the passenger side at 94 (water temp).
