"Grabby" surface coated breaks - any cure?

My new (to me) Macan has the Surface Coated Breaks. The pedal is not at all progressive - not much retardation then wham, just about throws me into the windscreen!

Is this a "oh they all do that sir" thing? Anyone else had issues? Anyone know how to fix the problem to make the pedal nice and progressive like steels?
