Try a Mk1 or 2 Golf 1.3, should be cheap to insure and it'll awesome fun on the back roads.
ETA: Try a 1.4 Volvo 340 as your first car, I was getting quotes of £800, so it should be accessible for you. You'll love wet roundabouts.
