I have typed this about 3 times now and keep going back to the picture and changing my mind. I have therefore reached the conclusion that I am probably abmivalent between the two so if it were a lot of work, probably would not bother.
I think a wood that matched the steering wheel more closely would have probably got a yes. Lovely car by the way....

Forgive me if I'm talking out of turn, but I find that completely flat dash's look rather too kit for my liking. It would involve a little more work but not hard and I'm sure hugely more satisfying to lay one up in fibreglass.
Obviously taking note of the position of all the none moveable areas like fixing points, steering wheel apature (sp?)and the like, you could make your own 'plug' design out of MDF and filler, meaning you can angle the dials slightly, add small stowage recesses or recess some of the switchgear. Not too way-out mind you, just enough to give it a little air of factory build.
When your happy with the layout, polish the plug up and wax it, take a fibreglass mould, then from that the finished dash lay up can be taken, then cut out all the required holes. Another advantage is that you can, should you wish, lay it up using a gelcoat colour to match the bodywork.
Finally to help pay for some of your hard work invested in the mould, you could either offer to lay up other folks dash's for them or even just flog it off on e-bay.
