Subaru Legacy 3.0 B Spec 07 - always at the bar?

I've just taken delivery of a new 07 Spec B tourer, manual, which makes it pretty rare I think and no fuel economy wasn't really up there as the most important issue, but still 23.4 mpg (I'm still running it in and so it's being treated like a new born, I haven't even ventured much above 5000 revs yet) is pretty poor. No scratch that, It's awful for light use.
Yes, I know that we all know that Scoobies drink - but SI Drive was meant (I thought) to tame this and save the Olly Read consumption for the days when the car is in full blat mode - the 23.4 mpg average I've got so far (first week of ownership, approx 230 miles) is in 'Intelligent' mode. For those not in the know, that's 'economy' mode. It doesn't seem too intelligent then.
Any other new Spec B Tourer owners out there - MPG-wise, does it get better? On long journeys perhaps?
As for the rest - the interior really is cool and well built and well thought out, in fact the quality if pretty high all round so far, Subaru have come a long way in this regard.
As for the Chav accusations I've seen elsewhere, how could this shrinking Violet (in looks at least) ever be on the wish-list of a Chav? It's a pretty unassuming car to look at - that was one of the reasons I chose it - the others were the handling and the (reasonable if not ballistic) pace.
On that note - if you've driven one in anger, which I haven't due to the weedy oil that it comes with for the first 1000 miles and the running in period, how good is it?
Any views welcome, any experiences shared would be very welcome.

Subarus always get better at everything once they're run in.
Remember to keep gradually building the revs higher as you get through the run-in period, and never leave it just sitting at the same revs for too long - if spending a while at constant speed just alternate which gear you're in to keep the revs changing a bit.
ETA: My '97 Legacy 2.0 wagon generally averages about 30 mpg, or up to 35 if I'm just cruising on a long trip (best I've had was 36 average over half a tank nonstop). I expect the 3.0 will drink a bit more than that though.

Thanks for the tip, I'm just about to do a couple of days of long motorway runs so I'll bear that in mind. I'll pass the 1000 mile mark next week and so will see how the car feels when it's in Sports sharp mode - ie fast mode - although I suppose I should wait until I've had the oil changed at the 1000 mile mark (the car is delivered with a thinner oil for running in) to risk not cooking the valves or something. I don't want to sound spoilt, but it's pretty frustrating having to drive a car bought for it's performance slowly! Ah, I suppose good things come to those who wait and all that...
