I have some good roads, but I wouldn't post them anywhere public. Some are obvious, some less so.
At risk of stating the bleeding obvious;-
May I recomend you get a good quality road atlas, and check out all the smaller roads - most "A" roads are too heavily policed, motorways are boring unless doubling the speed limit.
Go for roads away from urban sprawl, the twistier the better, within reason. The less side roads means that you can speed without worrying about numpties. Fill up before venturing too far.
Also check out hilly/mountainous areas, the corners are usually fun, especially where the contour lines on the map are close together.
A well maintained country road is a joy, and should be shared. But not with Plod, or anyone who may stick a camera there. Don't post good roads on the internet. Email maybe, but best to talk down the pub, or on the phone.
Unclassified roads can be surprisingly good for driver involvement, but often there is too much crud on the road for serious stuff. "B" roads are my favourite, but don't forget that if you do get it wrong, you may be so far out that no one passes your wreck for days...
And finally, just because there are no Gatso's, watch out for Helicopters - Wales is a good example of chopper coppers. Hert + Beds don't have many, but it helps to have a "co pilot" who watches the sky for you!! Nothing makes for brown trousers more than being followed at 20ft by a chopper. I know from experience.
Find your own roads! explore, it's the joy of having private transport. Make it your mission to find a new one every week or so. You can use it as your excuse to go for a blast, and maybe find a nice little pub. Don't just gather where other people hang out. Swapping tales of glory is cool if someone else can back you up, telling stories down the pub instead of being OUT THERE having fun is a wasted sunny day.

With regards to hilly/mountainous roads.
The unrestricted highlands of the Isle Of Man are good for this. I remember being in an Escort Cosworth being driven by a pro driver, clipping along I have to say, round a corner almost sideways only to be met by 3 lads on fireblades having a bit of fun the other way.

heh! don't I know it. The worst thing is worrying about the post for the next 2 weeks if you do something a bit "rash" infront of our friends in blue. Must admit that the lee way out in the sticks is generally a LOT more than in urban areas.
