Mini Road Trip - 3 days - Starting from North Wales

It depends on your opinion of 'good driving' road.
Get yourself down to Devon and enjoy one of my favourite roads, the A379, between Dawlish and Plymouth - It is a road with a great variety of scenery.
Sweeping country roads, fun hills, the bridge at Teignmouth, the traffic travelling in/through Babbacombe /Torbay/Paignton, more hills, the Dartmouth ferry, Blackpool Sands, Slapton Ley, Frogmore, Kingsbridge, and then more open countryside interspersed with a number villages (including Brixton!).
There are some stretches where you can get a bit of speed up, but don't count on a high average MPH.
It also has plenty of places to which you can meander off the 'main' road.
Drive in either direction - Hotels available in both the Exeter and the Plymouth areas, which are less than an hour from each other on the A38 main road, so you can stay at the same hotel for both nights.

Starting from North Wales surely makes this a harder task?
Depending on how much you like driving (i.e. for prolonged periods), it might just be possible to squeeze the Northumberland 250 in. I make it about 4 1/2 hours from North Wales to Allenheads (first overnight stop perhaps), and going clockwise it'd be about 4 hours driving the first day to (perhaps) stop in Bamburgh. That leaves another ~3 hours to complete the nland250 on the final day - but then you have the slog home on top of that.
Based on that you could push the both stops further round the route?
