Cherbourg To Nerja Route Advice

I'm hoping this is the right forum to post this into....
So one of my best mates was supposed to be taking the plunge this month in Nerja but with this Covid carry on it's been defered to next year.
In light of this, it's given me and another good mate the chance to plan out a bit of a European road trip.
All going to plan this will be the last hurrah for my current daily shed an '09 Passat Highline 2.0 CR TDI with 199k miles on the clock.
So it's not going to be an overly sporty run but hopefully it will be reasonably comfortable and economical.
Hoping to get her there and back in one piece.
I'm looking for some general advice on the route / trip in general - are there any sights worth seeing en route ?
Having driven across France once before I'd like to avoid the multiple tolls on the motorways and it's quite nice to see bits off the beaten track.
Google maps has thrown up 2 potential options....
1)Cherbourg - Nantes - Bordeaux - San Sebastian - Burgos - Madrid - Linares - Granada - Nerja
2)Cherbourg - Nantes - Bordeaux - Toulouse - Pyrennes / Near Andorra - Monresa - Valencia - Murcia - Nerja
The second option is appealing given its taking in the Pyrenees and the Spanish coast, but I'm open to any and all suggestions at this point.
Thoughts ? Words of advice ?
