I'm due to start my first build later this year - a Pembleton - I've already got the donor and a bike engine to install.
These really aren't the best starter kits as you really don't get much from the manufacturer and the bodywork is all hand made, and there's a lot of scope to fabricate and build it how you want it. I already own a Pembleton though and have done a fir bit to it, so mechanically im not worried at all. my main area of uncertainty is the bodywork.
Id suggest popping along to Stoneleigh in May and checking out the MX5 based kits on offer. There are plenty about and they look like relatively straight forward builds. MEV do a few, and theres various 7 type cars out there now too that use the mx5 as a donor.

Couple of pointer -
Get yourself to a show and have a look at the cars, speak to the guys on the stand and also in the club areas outside.
Once you have an idea of the market write yourself a spec - what you are going to use it for (touring, track, Sunday blat), body kit/bits/single donor, style (seven, exo, classic, off road, replica), engine (bike, car, i4, v6, v8), engine layout (mid, transverse or front longitudinal), and the big one budget.
Then hit the net, do you research, download the manuals and short list two or three.
Now the important bit - visit the factories, you will spend a lot of time on the phone/email solving issues, you need to know who you are going to be working with and that you like/trust them.
Also read the IVA manual, kits without screens are easier to build and potentially pass the test if you can live with it, also budget £750-1000 to pass the test. Also note companies like tribute do body kits that do not need IVA.
So, to answer the question -
For a mid range budget, say £10k I would put -
Classic tourer - MeV Replicar (mx5 based)
Classic racer - Sylva j17
Seven - mnr Mazda
Exo - sve exotech
Racer - spire gtr

P.s. There was a kit based on a golf a while back but it was a mk2, looked a lot like the Elise and called the sculptural engineering Larini.
