Unless you have very deep pockets to pay the company that would take it on I would say its a lame duck. The costs to do some of the things I have listed below may be to much and you will have to modify the bodywork. It can all be done but unless you build it that way originally it will be a lot of work.
Exterior Projections, very stringent on sharp edges etc should you collide with a pedestrian
You would have to extend the wheel arches to cover the entire width of the tyres.
Mirrors need to be very carefully placed
Lights
Reverse gear required or an electric reverse
Windows (cant find a definition on this, I know you can have no roof or windscreen but not sure how it would work with having a roof and window openings)
Wash wiper
demister
Collapsable steering column
Immobiliser
Non-bias brakes
interior projections (all interior parts to have a certain radius etc) to protect you in a crash.
Noise
Horn
Seatbelt position
All possible but more than it worth

Anything can be overcome. The window is an easy one as it is flat glass and Pilkingtons will do that properly marked up.
Southways Auto's would be worth a look and the other that springs to mind is Vince? at vindicator cars, click on the link below and you will see one he did that everyone said was a none starter.
The but for me is why do it? On the road it will be too fast to enjoy, so if it is as a gimmick then fine other wise just keep it for the track.

If it's that much of a problem, cut the roof off & re-attach after IVA, but as has been said, there are plenty of places that can cut, mark & fit flat glass.

Again, don't see the problem here, it's been done before, or if going roof-less it's not required.

plenty of options on the market, see "car Builder Solutions" website, or - again, only a problem if you IVA with a screen.

Easy enough to find in a scrappy

simply lock off the bias ones as stated in the IVA manual

This is perhaps the tricky one - you'll have to prove the mounts are strong enough, but it's not insurmountable as anyone who's registered a self-build will attest.

Ok couple of things here as for running with a window this is not a requirement for an MOT /IVA test even if you have a roof. Bonus is you don't need window washer or wipers either. As for the wheel sticking out you get an inch or so . So slightly narrower wheels will sort that and the steering column is collapseable in a legends race car every thing is pretty easy to sort .
A challenging project but nothing insurmountable that couldn’t be achieved given time and cash I’d say. Just read the IVA manual and make a big checklist or pay someone who knows what they’re doing.
Would make a fun road car and certainly turn heads. Bike engined cars are an acquired taste on the road in my experience but deliver something akin to a racer feel with the revs and punching up through the sequential box.
Go into it informed with eyes wide open and it’d be very rewarding to achieve and then drive I’m sure. A project for the heart rather than head to have something almost unique. Don’t go into it ever expecting to recoup your investment time and cash wise mind...

To confirm that the window has been deliberately removed an examiner
should ensure that there are no window mechanisms, runners etc. or other
window fixings that would indicate that a window should be fitted. If it is
clear that, without modification, a window can be fitted then the window is
to be considered missing."
