I'm certainly no expert in this area of the car world, but can anyone explain why this Supra is currently bidding so high?

The Americans are going a little crazy over the Mkiv.
Recent (the last couple of years) prices have gone up a lot in Japan (and therefore gradually here and Europe etc), as the Americans can import 25 year old ones. Not they seem to be in huge numbers, but the domestic ones seem to be on a general upward trend especially the manuals and stock/untampered ones.

I'm assuming it's a proper USDM Supra Turbo, which in itself is rare.
Then add on to that it's a manual rather than an auto.
Then add on to that it's seriously low mileage
Finally, it's completely unmodified.
I believe the term in the US is 'unicorn'?

On top of all that it's a Targa also so it's all but impossible to find regardless of condition. Then add on to that it's a manual rather than an auto.

One sold earlier in the year at auction in the US for just shy of $175k if I remember rightly.

The full hard-top is much rarer (326 to ~3700).

That makes it an ideal car to paint Orange and order some overnight parts from Japan. One sold earlier in the year at auction in the US for just shy of $175k if I remember rightly.
