Henderson Taylor have a good policy that includes 6 track days per year, mods, and agreed value.
Mannings or Competition Car Insurance are your other options.

I used Sky Insurance which cost £500 with commuting to and from work included, 6,000 miles (which added quite a bit as compared to even 5,000 miles), and as a second car I had no dedicated No Claims Bonus. I also told them of all the modifications including increased power to 425bhp. I am 50 with no recent claims/accident history.

Not useful as a shopping reference for you guys across the Atlantic, but I was surprised at how inexpensively they quoted my insurance premium. At lower $400's USD/yr, it is roughly 1/3 the cost to insure than my son's 2016 Mazda CX-5 which we just put on the policy at the same time! Once they figure out what it is, I wonder if the premium will jump up at the next renewal?

I believe admiral can be funny with mods, especially intercoolers?
