Give Progressive a shot, and it would be a quoted value policy of whatever value you can justify by receipts. Can't do it though until they inspect the car, but they will do it and have done so before.
Be carefull with Grundy and Haggerty as they won't insure to my knowledge as a daily driver, so make sure to discuss the details specifically on how you will use the car .............. want to make sure your covered if you run off to the store for something which is "daily driving" as opposed to being on the way to a car show. Words to the wise.

AAA (Auto Club of America) is also a good choice to look into and may be a little less expensive than Progressive.
They were willing to create a new car code to add the Noble to their list of insurable cars; potentially this should make it much easier for everyone else to get a quote with them now. (I'm not sure if the info from their So. California branches are shared with the rest of the country, though).

Just out of interest, what kind of money are we talking here? I pay around £1000 here in the UK (not too bad an area and I'm 37). That's for 10,000miles a year. That covers most things.
