New Car that does it all

So looking for some opinions currently my "fleet" is a 10 year old Honda Civic that I drive every day & a Toyota GR86 that is a weekend car that I don't drive enough.
I'm thinking of replacing them with one car that does everything so I'm looking at I suppose hot hatches so would welcome any suggestions, requirements are....

Budget up to 30k new list under 40k don't want to pay additional road tax
Sub 7 seconds 0 to 60 time

I think you may struggle a bit to get a <£40k list price nearly new car with decent power. Possibly an S3 "Entry" which I think was under £40.I'm thinking of replacing them with one car that does everything so I'm looking at I suppose hot hatches so would welcome any suggestions, requirements are....

One car that popped up was the CUPRA Leon. Nice car, 300bhp 0-60 less than 5 secs, AWD etc. 2023 model with 10k on the clock for £29k
