Scrapping car without registration documents

I am looking at buying a non-runner , stripping some parts off to use on my vehicle, then scrapping the donor.
However the donor vehicle has no reg docs, and is/was French registered. It is low value so doubt that it has been officially exported/imported.
There is apparently a visible VIN number - and the private seller has offered a written receipt (to which I presumably can ask them to insert reasonable statements such as stating that they have full legal title etc).
My question- can a scrapyard/dismantler accept a car without some official documents? I can provide my identity details and the seller receipt therefore there would be a papertrail of sorts.
I am not looking to register the vehicle or get official paperwork - just not worth the hassle. However I'd also rather not end up with a massive fine or jail time either!
The donor is worth mid-hundreds (even mint examples are only a handful of thousands) - therefore it is unlikely that it has been stolen as not worth the effort. However I can't prove that - and a UK V5 would not prove ownership anyway.
