Buying a car with a private plate....

Getting in a bit of a muddle with this.....
Found my partner a good c class mercedes via a private sale in Kent. Only sticking point is what we should be doing with the private plate?
Seller wants to keep the plate and has put the old 62 plate ones back on the car and alegedly sent off the request to the DVLA.
However when we did the hpi check it still shows with the sellers plate on the car.
For the subject of driving away from the sale at the weekend what plate should we display on the car? Assume there is a processing time from the DVLA?
Don't want to get pinged by anpr and in trouble as soon as we leave.

Personally I wouldn't take the car until the correct V5 was in my hand.

You'll need to wait until the seller receives the new V5 document from DVLA with the previous registration. You need the reference number from this document to tax the car.

Only takes a few days for new paperwork to arrive. All done online now.

Assuming the seller has done this all online then he will have proof to show you in the form of both the email and the certificate sent to get the plates made up or put back on the car assuming he had them already.
He will then be receiving the new V5 which then needs amending to show you as the new owner.
As T has commented this should all only take a few days.
You need to ensure that assuming this is all the case the car is indeed wearing the right plates and your Insurance also shows this.
There will always be a delay of overlap so I suppose technically ANPR may trigger but as long as you have copies of all the paperwork it shouldn't be an issue.
