Occasional use practical fun suburban car - approx £7k

Hi,
Looking for suggestions on a new car for a couple.
It'll be driven occasionally on evenings and weekends in the London suburbs, maybe longer trips a few times a year.
It needs to be ULEZ compliant, petrol, hybrid would be nice but might be pushing it at this price point.
Ideally low insurance group and low running/maintenance costs.
Also 5 doors, it needs to be practical but would be nice if it was fun to drive!
So far we're looking at models from 2016 onwards:
Toyota Yaris
Ford Fiesta
Ford Focus
We've previously driven Vauxhal Corsa, Ford Focus, Toyota Yaris, and rarely some larger cars such as Citreon Berlingo and VW caddy.
I'm not a mechanic but do consider myself to be practical and able and willing to do maintenance and minor repair work.
I probably won't know what to look out for when viewing a car but am willing to read up on it.
The budget does have a little flexibility for the right car, but ideally we don't want to spend much more than that. We want to own outright so not interested in any leasing finance etc.
So with all of the above, what models should we be looking at?

It's personal opinion but I see no point in a 5 door small hatch.
