What used estates are wide enough for 2 people to camp in?

I've slept 2 in the boot of the Civic, Both ~6ft in reasonable comfort; I'm sure you would be fine in a full size estate.
The biggest problem you'll have is condensation - I'd suggest giving some consideration to ventilation (At minimum wind deflectors and opened windows).
Bjorn Nyland of Tesla youtube fame has camped in his Teslas and has some nice insulation tricks for Norway, which would help keep you cosy in the UK winter.

Discovery TD-5. I took the rear seats out for a trip to France, in Feb. TD-5 load area is longer than the 300TDi Discovery. Plus the rear, has plenty of head room. £2,800 buys a half decent one.

Why not a cheap 4WD SUV? Take out all the seats bar the front two, build a simple plywood platform and install the mattress.
They're often wider, nearly always higher and with way more overall internal space.
You don't need just width for your bed but storage areas for water containers, mini stove, food, clothes and myriad other handy stuff.
An estate might be fine for a one night concert but if you're holidaying then go bigger.

I can confirm the boot of an L322 Range Rover is large enough for two adults and one medium sized dog to spend the night as long as you fold the rear seats flat.
We were camping in Cornwall during the storms of 2004 when Boscastle, just up the road, had their floods. We weren't convinced the tent was going to last the night so abandoned it and took the air-bed and sleeping bags into the boot of the car and dumped our bags across the front seats.
It was certainly a drier and quieter night in there, and much less breezy. The dog loved it.
Thankfully, the tent was still standing in the morning, must have had super pegs.
Not sure I'd choose that option regularly though.
