What car - 2500kg towing weight, 'fun', £5000

Hey folks
Might be taking the piss a bit here, had a bit of change of circumstance mandating I downsize my 2 car fleet to a single motor. Currently drive a 207GTi but have a Mitsubishi shogun SWB I use to tow a 2.5ton trailer about on the odd occasion. Id ideally not want to run the shogun as my sole vehicle as I have before in the past and it is a bit of a pain to commute in. However I honestly cant think of any car which can tow the weight I need whilst still being moderately enjoyable to drive on a sunny b-road.
Basically the requirements are
-2500kg towing capacity (before someone turns up to lecture about licences: YES I HAVE B+E, it is PH after all
)
-Economic-ish well unladen (~30mpg)
-'fun' not expecting GTi levels of B-road hooning but want something that can keep a pretty good pace along a b-road and pass the 40mph numpties easily (something the shogun cant do with its wheezy diesel)
-£5000 budget is what I estimate ill get from selling my 2 current cars
Really looking at big petrol (preferably sporty) versions of large estates but I have only ever towed with SUVs & vans before. Tried looking about on caravan club (im not towing a caravan) type review places but they only seem interested in £20k new stuff.

Ugh I need to get real creative now, trailer is plated gvw of 2500kg with 2200kg payload I can slap a 2200kg plate on it no problem but that puts my payload bang on my boats DRY weight (1900kg), im trying to figure out what bits I can take out to save a few kg now

EDIT: Just reread that advert. Not that particular one! Rattles on overun and under acceleration sound like DSG or dual mass flywheel issues. Also just realised how rare the big petrols are, all the cheaper 2WD ones have much lower towing weights, that is definetly what I'm looking for though thanks for the recommendation (Pheaton is a bit too bargy for my tastes, also I prefer estates to big saloons).
