Sticking a variable ratio gearbox on the engine is mostly what does it though.
First, and sometimes, second gear can give access to wheel torque numbers that significantly exceed what the driven tyres can handle.
Adding 4WD obviously helps, but for high-powered RWD cars, all of us are aware of what might happen if too much throttle is used in these cars when grip levels aren't optimum and/or traction/stability control systems are off or not present.
EVs, by and large, avoid this by essentially welding the car into third gear and giving you more torque to deal with that.
