My friend used to take his Ferrari's there (348/355/360) might just work on newer cars, so unsure if they do carbs but a call cant hurt he always spoke highly of them.
No RR on site though.

Maybe a bit late to this thread, and it's not exactly that local to Cambridge, but a shortish trip down the M11 to see Steve Greenald at Track n Road would be my recommendation. Steve started out at Brian Hart's 35+ years ago and has the knowledge to set up carbs on a RR.http://www.tracknroad.com/
