Unfortunately I got caught in roadworks round the corner from my house, I noticed the left hand fan didn’t come on when it usually does and the gauge went ever so slightly over 190 just as I got moving again, when I parked up at home the gauge rose to as pictured, this was the max it got to.
I wouldn’t have done damage at this temp would I? As I mentioned 190 is usually the point in which the fan comes on.

Both fans should have come on, one just before 190 and one at 190 to bring the temp down.
If the left fan did not turn on then it could be the temperature switch which is located at the top of the left hand radiator. They can fail.
Fyi, the right hand fan shares one water radiator and the oil radiator. The switch for that is in the engine valley.
I would not be happy with that temperature guage picture.
But that's only my opinion of course.

Just to make clear, I’m not content with the car getting that hot on a regular basis, as said usually the LH fan comes on at 190.If the left fan did not turn on then it could be the temperature switch which is located at the top of the left hand radiator. They can fail.

I’ll rectify the fan issue, my immediate concern was to whether or not I could have caused damage/cooked something at the temperature shown
There won't be any damage. It will probably have burped some coolant at that temp so check the level and top up.
Loads of info about 355 fans out there. You've likely got a blown fuse, which will blow and blow again as the motors age. Replace both fans. Generic ones will suffice (there's a thread on here somewhere) or buy some OEM ones from SPAL. Don't pay Ferrari prices.

As above, it should be OK. Check to coolant, if it is still there then it should be OK, and smell in the oil cap to see if there's any burnt smell.
The other consideration is it is a 30 year old Italian temp gauge. Even when new they were often suggestive rather than indicative. Some cars of that era (from many brands) barely ever got to halfway, I've seen others that permanently sat just under the red.

355 fans are known to be problematic and regularly fail. A long time ago, given that it was quite an issue, a number of independents would offer a fan swap out service whente they would replace one fan with a refurbished and then refurbish the fan they got and so on.
Before you look at the fan though check the fuse first as they are also known to go quite often. Hope it’s the latter.
