355gtb --?decat with standard exhaust

what would a de-catted 355 with the standard factory exhaust sound like?
any problems with CEL anticipated by going down this route?

mine sounded quite good / better than before, but not as good as the once with sports exhaust. I sold it not long after the decat (reasons unrelated to the car) and i think the cel was blinking a few times, but might have been a drained battery issue at the time. it was 3 years ago, so recollection unfortunately not the best. cats are heavy, so this was the first cheap step to start the wait removal process, would have tried to find the straight challenge exhaust next.

If memory serves, wasn't the earlier Motronic system a little more forgiving of these kind of things than the later one?

Yes, the 2.7 gave little problem, you could also simply disconnect the slow down thermocouples.
