Trying to locate a decent spec, low mileage Cayman for a mid 20s budget, with current pricing all over the place, is this realistic? Not too fussy on engine size.

Mid 20s will get you a good car if you hold out for the right one.

Low milage and mint condition I’d say closer to 30 tbh.

There's 16 in the PH ads under £30k, but not much under £25k really. I think you'd get something acceptable for around £25k.

Depends what you call "low mileage" but I think you'll need to pay closer to £30k for a decent one unless it's the base model with few options. As they are the last of the flat sixes apart from the GTS4.0, they will hold their money.

100% this. All coming up to ten years’ old now at least so right at the end of their depreciation curves.

Last of the F6’s well not really, they are pretty far away from being classics and there are still plenty about.

Buy on condition. Most stuff holds its value once it’s over ten years old, it’s the running costs that can usually bite.
