Police cars tend to brake sharply, swerve and generally be a bit less predictable than your average country road pootler.
You also need to factor in potential time gain from the overtake Vs the probability of 5 minutes of roadside sarcasm for your trouble.
On the whole, I'd say it's not worth it.
