i am 21 and currently own a loeb c2. looking to get a new car, will have about 12k to spend on it. I need something that's big and can be made to go fast (if it already doesn't already ) I don't have a clue what to look at was thinking something like a mondeo st or a vectra vxr...but I don't have a clue to be honest.

It really depends on what you want in the car. There are a lot of people here that will give lots of different views. Can you tell me why you need something as big as a Mondeo or Vectra?
If you got for something the size down then you open up a whole raft of possiblities. There is the Mk1 Focus RS, Alfa 147 GTA to name just 2. Good luck insuring anything in the serious hot hatch market though........

me and the other half are thinking about starting a family in the not too distant future, she rides horses so it be helpful if it was big enough to tow stuff. I could afford about 1.5k a year insurance...ish and I want something that's going to last a good 6/7 years.

If I was 21 and had 12k to spend on a fast car I personally wouldn't be looking at a Vectra/Mondeo. Even if it meant spending less on the car and using some of the funds on insurance.thanks in advance.

Recently one of these was going for £10.5k, Seriously think you'd struggle to go much quicker on this sort of money and not be a race car or similar.
2003/4 Mustang Cobra
Runs a 4.6 DOHC V8 with an Eaton M112R Roots style blower. Stock they make 390hp/390 lbft and will run past 160mph and cover the 1/4 mile in around 12.x seconds at 112mph+
They also have IRS and a Tremac T56 6 speed manual gearbox.
But this is only the start of it. For a few mods (exhaust, CAI, pulley and tune) will give you around 550bhp!
The stock engine is also good for around 1000-1200hp in stock trim too. And plenty of ways of getting it there.
They also look very Bad Ass! And sound awesome....

Other obvious candidates would be:
Supra TT MK IV
Skyline GT-R (32/33)
Fbody (Camaro/Trans Am)
Corvette
Monaro
Lots of other options, but kit and classic would seem good bets for a custom build. Or maybe something like a TVR, but all of the others above are easy to tune with lots of bits off the shelf.

If you are looking to tow horses I would forget VXRs etc. You need 4x4 and a car with more weight, its just not safe to tow horses with smaller vehicles. The absolute minimum I would ever consider using to tow a horse would be something like an audi allroad. We use discoverys for our horses, we used to have a bmw 525ix touring which we used on the odd occasion, but it really wasn't suitable for the job and would struggle even with one horse loaded up. ta again.

Even freelanders aren't great for towing horses, people I know who have them for towing say they will struggle with towing one horse and end up with clutches going way before they should.

So if that's the case, I would say sod it to out right pace and go simply for fun instead. So look at things like these:
If they still want a bit of pace and 4x4 towing ability then maybe a 5.0 litre V10 Tdi one of these wouldn't be too bad:

well sort of....
When I was 21, I still had my Focus 1.8 Collection. But 4 months after my 22nd, I spend £13k on a Mondeo ST TDCi that was 2 years old (this is 2 years ago). Sold that after a year & bought my 2 year old Focus ST3 3dr when I was 23. Insurance isnt bad at all. Mondeo @ 23y.o with 5 years ncb was just over £400 then extra £90 for 6 months for the change to the Focus. Now im 24 with 6 years ncb (started driving @ 18) & pay £709 for my Focus ST. More than expected but everybodys insurance hass gone up.

Monaro's maybe just but an older one (5.7l version isnt it?)
All others are within price IMO.
5.7 litre LS1 is fine and will make almost the same HP as a 6.0 even at 100bhp/litre (which would need a power adder like a blower to achieve) they would only be 30hp different.
Skoda Octavia vRS Estate. 200bhp (and chippable, although that may not equate with keeping for 6 years), plenty of space, and the chassis underneath is the MkV Golf, which means it's actually quite good fun.
If you're thinking of starting a family I'd avoid anything which could come with big bills (i.e. older German/Jap high-power stuff), as you'll need all your cash for the little bundle ofmisery joy!
Alternatively, a Subaru Legacy 3.0 or Forester STi are both well worth considering - Subaru are one of THE most reliable manufacturers (nothing German can touch them), yet the Legacy is every bit the equal of a 3-series (and usefully is a little larger), while the Forester is an Impreza underneath, so will be huge fun, if a little ugly! Downside to both would be fuel-economy, so if you're doing big-miles forget it.
