Trackday experience/gift

My girlfriend wants to know what she can get me for Christmas, so I'm thinking of suggesting a track experience gift day thing.
I've done the Thruxton Lambo/Porshce/single seater day several years ago which I loved as I got to drive one of my dream cars,but it was a lot of money for not a lot of track time.
So I'm thinking something maybe a bit more involved, more focused on the driving. I like fast and somewhere that would encourage this would be good!
There's so many different days out there, I'd like some suggestions based on people's previous experience please.
She has said price isn't too much of an issue, and I'm open to all suggestions as long as it involves speed and adrenaline! :-)

I've heard of the Palmersport days and they look pretty good, I will look into that more.
I've done plenty of drift days in the past in previous cars, but as awesome as they are, they aren't really enough of a special experience to warrant a gift, if you get what I mean... Plus the extra wear and tear on the car and risk of damage is not something I want to put my M3 through as it is my only car now. Same goes for normal trackdays.
In the past I've always had a drifter and a daily car, but the realisation that I wasn't going to be able to afford regular drifting is why I went and got a good all round fun car, hence the M3.
So, something which I can turn up, have fun, then go home with peace of mind is what I'm after.
I'm also considering a rally day, as that is something I've never done, but I see there's a new thread about that which has just popped up, so I'll be keeping an eye on that.
