If it's the same as my dad's S2 then the needle will stay on 3/4 for a while and then jump to 1/2. It seems to be a very lazy sensor that causes the reading to jump. My dad used to get between 15mpg (round town) to 25mpg on a nice steady 70mph motorway run.
The best way to check the consumption is to fill it to the brim and then run it for 200-300 miles (if you get that much from a tank) and then re-fill it.
Divide the number of miles by the number of gallons used - much more accurate than a fuel gauge.
My M5 does something similar - 20 gallon tank and about 20mpg. 3/4 should be 15 gallons left, however after I've done 30 miles the level shows 3/4 full which means I've used 5 gallons for only 30 miles. It stays on 3/4 until about 150 miles and then drops to 1/2 until 300. Then it rapidly drops to 1/4 and reserve within 100 miles!

so maybe this fuel guage thing is a common weakness? hmm. i thought that S2s are meant to do between 20 and 35 mpg.
does super unleaded make any difference?
also what level is the oil 'bar guage' meant to be? (pressure)....sometimes mine is on at 5 (max) then gradually drops to around 3.

My S2 Avant (6 speed) returns 25mpg on Motorway, 19mpg in Town (London) and throw it on a track and it drops to 9mpg (especially 4 up at the Bedford Autodrome.)It is a thirsty car overall - quite heavy and 4 wheel drive don't help!
As to Oil Pressure - at tickover should not drop below 2 bar, 5 bar is fine when driving your car - essentially as the revs rise, so the oil pressure rises accordingly. If the car is in traffic (stop/start driving) the oil temp will rise, which thins the oil, resulting in a lowering of pressure.

Borrowed an S2 for a while some time ago and I must admit that I did suffer similar petrol gauge problems. Didnt move, then moved, didnt move then shot down - that type of thing. Also had an A4 for 40K miles and the same was true for that - the first half went down with reasonable uniformity. After that it seemed to go slow....
The best bet I guess is to fill to the brim, work out how big the fuel tank is (or look up in the manual) and then see how many miles you can get out of one single tank (and not running out of petrol as I friend of mine did). A little maths and presto - better guide to MPG rather than on board computer and guess work....
Oh, and one thing that I do remember for the old S2 - it hates town driving. Steady run without too much accelerating and braking and it was fine. Stop start kills it....
