I stayed in a 12 man tent at a festival a number of years ago, it was great, 3 "bedrooms", living room and porch. Very easy to erect with all the collapsible rods and ropes, took about 30mins our first time and 15mins the next few times we used it. My friend is 6'2" and could stand up in the living room bit no problem though the bedrooms were more of a squeeze. Only issue that I could find is that is is heavy, so if your car is not nearby then it's quite a chore to do.
We have something similar to this but an older model and its plenty big enough for the 5 of us.

We had a much bigger tent before but just got fed up of the time and effort it took to put up. Also the space it took up both on the pitch and in the car.
Also if you camp in decent weather you won't spend much time in the tent anyway.
RE. height, over a certain size they are mostly a standard height inside anyway.
