The Remoska is one bit of kit that many motorhomers recommend if you have electric hook-up.
Not cheap though, there are no doubt other options.

There are probably other ways of roasting, but the skillet has served us very well... Bearing in mind that all of our camping cooking is done on a campingGaz chef (two gas hobs and a grill) the skillet works well as a mini oven on one hob, and another multiple pan setup on the other hob does the veg and potatoes.
Not the easiest thing in the world to do a Sunday roast using this setup, but definitely achievable by Mrs Meeja!
The other camping cooking utility we have that I would recommend is a Diablo.... You can make mini toasted sandwiches on a camping stove really easily.
