I’m guessing you will need to start with a chassis cab rather than a panel van

You'd be barking to even try. Start with a chassis cab or you'll be in a world of pain.

Don't bother, by the time you have converted it ,it will be a long and convoluted process , it will have cost of fortune in not only time but money and have the structural integrity and load capacity of a bag for life .
Go and find a chassis cab or old curtain sider / luton van and a recovery bed kit from one of the many suppliers.
Build costs of 4-5 £k for a basic set up or spend many hours searching for a used one that hasn't been bodged or abused or is a frankenstien mix of stolen parts .
At this size very few can legally carry much more than a family hatchback unless they have been uprated , plated , tachograph fitted and you have the correct licences .
