What is involved in fuel conversion of e5 to 3e10

I have impala 1975 and want to do conversion, is it just fuel line or need to upgrade pump and carb as well?

I think it's just a case of swapping the rubber hoses: I've been recommended Gates 'Barricade' hose. I should think the owners' club will be able to tell you about fuel pumps, valves etc.

Is there a club for Chevrolet owners that includes the Impala? There is usually someone who will be able to answer any questions or give advice. The forum shown above will probably be similar, I imagine.

On balance I'd probably stick with E5.

There may be soldered joints holding the fuel tank together, and on the fuel sender which may get attacked by the ethanol, as well as carburettor parts.

I'd also stick to E5 as much as possible. I ended up leaving my 87 Chevy parked for 6 months with E10 in the tank (circumstances beyond my control) and despite having new fuel lines and an ethanol compatible carburettor, it shat itself earlier this year. Tank was full of varnish, fuel filter was clogged, and the pump died.

For the extra £10 a tank, I'd use E5

Varnish as tank interior coming off/ paint flaking off?

No, it's a gummy residue that hardens over time and clogs everything up.
