hi quick question for you, why would some one unplug the maf sensor and put a screw through the throttle body either to keep the flap closed or open and join the 2 pipes that was connected to the servo, its on a 807 2.0 hdi?

Because it's been owned by a mechanically inept Baboon.

...and for the bonus points: What type of servo has two pipes connected to it?

Possably cos the MAF was giving out of range signals to the ECU and throwing up a fault code, putting the EML on?
The screw in the throttle flap and disconnected hoses sounds like a bodged EGR deleit possably ?

i have replaced the maf and throttle body and car works great sometimes lol
one minute it will run great the next it just looses power not limp mode just loss of power then it will come back when it feels like it
ive had it serviced cambelt belt changed water pump and dpf fluid refilled
there are no fault codes or warning lights coming on any idea why its doing this

Sounds like something for a specialist diagnostic garage, an indy Peugeot specialist or a Peugeot dealer who can use peugeot specific diagnostic equipment.
Pretty much a certainty the things you found were done to disguise the problem.
